About the Recipe

Ingredients

  1. EVOO

  2. onion chopped

  3. garlic 

  4. carrot

  5. Zucchini cubes or circles roasted beforehand

  6. eggplant cubes or slices roasted beforehand

  7. Cauliflower cut into very small pieces

  8. Broccoli cut into very small pieces

  9. Celery pulp

  10. whole grain round rice washed (or any other type) 

  11. water

  12. Tomato (fresh or paste)

  13. ou can remove or add any other veggies (cabbage, capsicum,...)

  14. Salt and pepper to taste

  15. Ginger and turmeric

Preparation

  • EVOO

  • 1 big onion chopped

  • 3 cloves of garlic chopped

  • 1 shredded carrot

  • 2 raw Zucchini cubes or circles roasted beforehand

  • 1 eggplant cubes or slices roasted beforehand

  • Cauliflower cut into very small pieces

  • Broccoli cut into very small pieces

  • 2 spoons of Celery pulp from my daily celery juice 😊

  • 1 cup whole grain round rice washed (or any other type) 

  • 2 cups water

  • Tomato (fresh or paste)

  • You can remove or add any other veggies (cabbage, capsicum,...)

  • Salt and pepper to taste

  • Ginger and turmeric

    1. Start with EVOO
    2. add the onion and saute for few minutes, or until the onion begins to brown.
    3. Then add the garlic and stir for few minutes and add the spices
    4. Start by adding the veggies that takes the longest to cook and stir for few minutes before adding the next veggie
    5. And of course don’t forget to grate fresh ginger & turmeric 
    6. Add the tomato
    7. Then add the rice, stir for few minutes, add the water and simmer till done
