Atyab Soup

1. Stir chopped onions with EVOO


2. Add minced garlic


3. Wash and cut veggies of your choice in different shapes and sizes: I used: carrot, zucchini, artichoke, pumpkin, broccoli and tomato


4. start adding the veggies to the pot starting with the ones that need the most cooking and add few curry leaves or lime leaves or galangal or all the above 😊 I had curry leaves on hand so I threw in 3 small leaves


5. And of course don’t forget to grate fresh ginger & turmeric - as I do to ALL my recipes 😜


6. Stir the veggies for few minutes and then add 1 cup of coconut milk and 1 cup of water and simmer till done


7. In a separate pan, you can either cook shrimps or chicken with EVOO and grate a bit of garlic with fresh ginger and turmeric 


8. And now comes the exciting part ... what I love most ... the secret ingredients 🤫 add orange zest and 2 big spoons of Emm Daniel’s yummy peanut butter


9. You can either eat it on its own or add the shrimps and or the chicken to it


Et voila, ‘Atyab Soup’ 😋😋😋
